Apple Cake

I’m savoring the last days of “vacation,” so to speak… I’m in Dimaro, at my house, and while Silvia studies, I keep myself busy by baking sweets for our breakfast.

I love apple cakes in any form, from the simplest to the most elaborate. For me, apple cake has that homemade taste.

Usually, I follow a light recipe to watch my figure! But today, for a change, I followed a rather buttery recipe! The house is filled with a delightful aroma! What time should we have a snack??? I don’t think I’ll wait until 4 o’clock…

Method:

I peeled and sliced the apples, then I soaked them in the juice of half a lemon to prevent them from browning. I melted the butter and added the sugar, the three egg yolks, the vanilla sugar, and mixed them for a few seconds. Separately, I whisked the egg whites until stiff peaks formed with a pinch of salt. I added the egg whites and the sifted flour with baking powder to the mixture, alternating and folding them in from bottom to top. I poured the batter into a baking pan lined with parchment paper, arranged the apple slices on top, pressing them slightly into the batter, and baked at 180°C for 40-45 minutes.

Here’s the result… delicious, although next time I will use less sugar! Have a good afternoon and a great weekend!
